    Prepare the Garlic

    Preheat the oven to 400°F (200°C). Cut the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast for about 30 minutes until soft and caramelized.

    Cook the Pasta

    In a large pot of salted boiling water, cook the radiatori pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

    Cook the Bacon

    In a large skillet, cook the bacon over medium heat until crispy. Remove from the skillet, crumble, and set aside, leaving the bacon fat in the pan.

    Make the Cream Sauce

    Squeeze the roasted garlic cloves into the skillet with the bacon fat. Add the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and smooth. If too thick, add reserved pasta water until desired consistency is reached.

    Combine Everything

    Add the drained pasta to the skillet and toss to coat in the sauce. Stir in the crumbled bacon, salt, black pepper to taste, and fresh parsley.

    Plate the pasta and garnish with kan-grow pea shoots and additional Parmesan cheese if desired.
