Method
Preparation
- 1
Caramelize the Bananas
In a skillet over medium heat, melt 1/2 cup of butter with 1 cup of brown sugar until bubbly. Slice the bananas and arrange them in the skillet, cooking for about 2-3 minutes until caramelized. Remove from heat and let cool slightly.
- 2
Prepare the Cake Batter
In a mixing bowl, cream together the remaining 1/2 cup of butter and 1 cup of granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- 3
Combine Dry Ingredients
In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet mixture, alternating with the milk, starting and ending with the flour mixture. Mix until just combined.
- 4
Assemble the Cake
Preheat the oven to 350°F (175°C). Pour the caramelized banana mixture into the bottom of a greased 9-inch round cake pan. Pour the cake batter over the bananas and smooth the top.
- 5
Bake
Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes before inverting onto a serving plate.
- 6
Serve
Serve warm with vanilla bean crème patissiere and a scoop of ice cream. Drizzle with rum caramel if desired.
