Cooking Instructions

  1. 1

    Prepare the Beef

In a large bowl, rub the chuck roast with chili powder, cumin, salt, and black pepper. Let it marinate for at least 30 minutes.

  2. 2

    Sear the Meat

In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the marinated chuck roast and sear on all sides until browned, about 5-7 minutes.

  3. 3

    Add Aromatics

Add chopped onion and minced garlic to the pot. Sauté until the onion is translucent, about 3-4 minutes.

  4. 4

    Braise the Beef

Pour in the beef broth and add the chipotle in adobo sauce. Bring to a simmer, cover, and reduce heat to low. Let it braise for 2-3 hours until the beef is tender.

  5. 5

    Shred the Beef

Once the beef is tender, remove it from the pot and shred it using two forks. Return the shredded beef to the pot and mix it with the braising liquid.

  6. 6

    Assemble the Sandwich

Slice the baguette in half and lightly toast it. Layer the shredded beef, white cheddar cheese, pickled red onions, and green tomato salsa inside the baguette.

  7. 7

    Serve

Cut the sandwich into portions and serve immediately.
