Cook the Barley
In a medium saucepan, bring 3 cups of water to a boil. Add the 1 cup of barley and a pinch of salt. Reduce the heat to low, cover, and simmer for about 30-40 minutes, or until the barley is tender and the water is absorbed. Remove from heat and let cool.

Prepare the Vegetables
While the barley is cooking, rinse and dry the lettuce leaves. Tear them into bite-sized pieces. Slice the large tomato into rounds.

In a small bowl, whisk together 2 tablespoons of olive oil, 1 tablespoon of lemon juice, 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper until well combined.

In a large bowl, combine the cooked barley, torn lettuce, and sliced tomato.
