Method

Pretzel Dough Preparation

    Activate Yeast

    In a large bowl, combine warm water, granulated sugar, and active dry yeast. Stir gently and let it sit for about 5-10 minutes until foamy.

    Mix Ingredients

    Add salt and all-purpose flour to the yeast mixture. Stir until a dough begins to form.

    Knead Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

    First Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

    Shape Pretzels

    Preheat the oven to 450°F (232°C). Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a long rope and shape it into a pretzel.

    Baking Soda Bath

    In a large pot, bring 10 cups of water and baking soda to a boil. Boil each pretzel for about 30 seconds on each side, then remove and place on a baking sheet lined with parchment paper.

    Egg Wash and Bake

    Brush each pretzel with beaten egg and sprinkle with coarse sea salt. Bake for 12-15 minutes or until golden brown.

Beer Mustard Preparation

    Combine Ingredients

    In a small bowl, mix together yellow mustard, Guinness beer, honey, apple cider vinegar, and garlic powder until well blended.

    Refrigerate the beer mustard for at least 30 minutes to allow the flavors to meld.

Guinness Cheese Sauce Preparation

    Melt Cream Cheese

    In a saucepan over medium heat, melt the cream cheese until smooth.

    Add Cheddar and Beer

    Gradually stir in the shredded cheddar cheese and Guinness beer, mixing until the cheese is melted and smooth.

    Finish Sauce

    Add milk, garlic powder, and black pepper to the cheese mixture. Stir until well combined and heated through.
