Turkey Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Prepare the Turkey

    Rinse the whole turkey under cold water and pat it dry with paper towels. Rub the turkey inside and out with olive oil, salt, black pepper, garlic powder, and onion powder for flavor.

    Stuff the Turkey

    Stuff the cavity of the turkey with chopped fresh rosemary and the lemon, cut in half.

    Roast the Turkey

    Place the turkey on a roasting rack in a roasting pan. Roast for about 2 to 2.5 hours, or until the internal temperature reaches 165°F (75°C). Baste every 30 minutes with the pan juices.

Stuffing

    Prepare the Stuffing Mixture

    In a large bowl, combine the mozzarella cheese, spinach (fresh or cooked), bread crumbs, Parmesan cheese, and beaten eggs. Mix well until fully combined.

    Fill the Turkey

    Once the turkey is partially cooked (about 1 hour in), carefully fill the cavity of the turkey with the stuffing mixture. Make sure not to overstuff.

    Make the Gravy

    After removing the turkey from the oven, place the roasting pan on the stove over medium heat. Add flour to the drippings and cook for 1-2 minutes, stirring constantly.

    Add Broth

    Gradually whisk in the chicken broth, scraping the bottom of the pan to release any browned bits. Allow to simmer until thickened. Season with salt and pepper.
