Quesadilla Filling

Quesadilla Assembly

Method

Prepare Filling

  1. 1

    Prepare Beans

If using canned pinto beans, drain and rinse them under cold water. If using dried beans, ensure they are cooked and mashed lightly.

  2. 2

    Shred Cheese

Grate the Monterey Jack cheese using a cheese grater and set aside.

  3. 3

    Combine Filling Ingredients

In a mixing bowl, combine the shredded Monterey Jack cheese, pinto beans, and fresh salsa. Mix until well combined.

Assemble and Cook Quesadilla

  1. 4

    Heat Pan

In a large skillet, heat 1 tablespoon of olive oil over medium heat.

  2. 5

    Assemble Quesadilla

Place a tortilla in the skillet, then spread a portion of the filling mixture evenly over half of the tortilla. Fold the tortilla in half to cover the filling.

  3. 6

    Cook Quesadilla

Cook for about 3-4 minutes on one side until golden brown. Flip the quesadilla and cook for an additional 3-4 minutes on the other side until the cheese is melted and the tortilla is crispy.

  4. 7

    Repeat Process

Repeat the process with the remaining tortillas and filling, adding more olive oil to the skillet as needed.

  5. 8

    Serve

Once all quesadillas are cooked, slice them into wedges and serve warm with sour cream on the side.
