    Peel and dice the potatoes into small cubes. Chop the onion, celery, and garlic finely.

    Prepare the Haddock

    If using frozen haddock, thaw it in the refrigerator overnight. Cut the fillets into bite-sized pieces.

Cooking

    In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onion, celery, and garlic. Sauté for about 5 minutes until softened.
