Prepare the Haddock
If using frozen haddock, thaw it in the refrigerator overnight. Cut the fillets into bite-sized pieces.
Cooking
- 3
Sauté the Aromatics
In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onion, celery, and garlic. Sauté for about 5 minutes until softened.
- 4
Add the Potatoes and Corn
Stir in the diced potatoes and corn kernels, cooking for another 3-4 minutes.
- 5
Add the Broth
Pour in the chicken broth and add the bay leaf, thyme, salt, and black pepper. Bring to a boil, then reduce the heat and simmer for 15-20 minutes or until the potatoes are tender.
- 6
Add the Haddock
Carefully add the haddock pieces to the pot. Simmer for an additional 5-7 minutes until the fish is cooked through and flakes easily.

Finish with Cream
Stir in the heavy cream and cook for another 2 minutes. Adjust seasoning if necessary.
