Preparation

    Prepare the Meat

    Trim excess fat from the beef brisket and cut it into large chunks. Season generously with salt and black pepper on all sides.

    Chop Vegetables

    Peel and chop the carrots, potatoes, parsnips, and turnips into bite-sized pieces. Dice the onion and mince the garlic.

Cooking

    Brown the Beef

    In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium-high heat. Add the seasoned beef brisket chunks and brown on all sides, about 5-7 minutes. Remove the beef and set aside.

    Sauté Vegetables

    In the same pot, add the diced onion and sauté until translucent, about 3-4 minutes. Add minced garlic and cook for an additional minute until fragrant.

    Combine Ingredients

    Return the browned beef to the pot. Add the chopped carrots, potatoes, parsnips, and turnips. Pour in the Guinness stout and beef broth. Stir in bay leaves, thyme, salt, and black pepper.

    Simmer the Stew

    Bring the mixture to a boil, then reduce the heat to low, cover, and let simmer for about 2-2.5 hours, or until the beef is tender and the vegetables are cooked through. Stir occasionally.

    Remove the bay leaves before serving. Ladle the stew into bowls and top with crispy fried onions. Enjoy!
