Preparation of the Fish

Prepare the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold beer or sparkling water until the batter is smooth and slightly thick.

Heat Oil
In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

Coat the Fish
Dip each fish fillet into the batter, ensuring it is fully coated, then carefully place it into the hot oil.

Fry the Fish
Fry the fish for about 4-5 minutes on each side or until golden brown and cooked through. Remove from oil and drain on paper towels.

Cut the Potatoes
Peel the potatoes and cut them into thick strips (about ½ inch wide).

Soak the Fries
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch. Drain and pat dry.

Fry the Fries (Second Fry)
Increase the oil temperature to 375°F (190°C) and fry the potatoes again in batches for an additional 3-4 minutes until they are golden brown and crispy. Season with salt to taste.
Preparation of the Tartar Sauce

Mix the Ingredients
In a small bowl, combine mayonnaise, dill pickles, capers, lemon juice, and fresh dill. Stir well until all ingredients are mixed.

Add salt to taste and adjust other seasonings if necessary. Refrigerate until ready to serve.
