Method

Prepare the Roja Chimichurri Sauce

    Make the Sauce

    In a food processor, combine the fresh parsley, oregano, garlic cloves, red chili flakes, red wine vinegar, olive oil, and salt. Blend until smooth and well combined. Set aside.

Make the Chimichurri Butter

    Combine Butter and Sauce

    In a mixing bowl, soften the unsalted butter and mix in 4 tablespoons of the prepared chimichurri sauce. Stir until thoroughly combined.

Prepare the Burger Patty

    Form the Patties

    In a bowl, gently mix the ground beef with salt and black pepper. Form the mixture into a patty shape, about 3/4 inch thick.

    Cook the Patties

    Preheat a grill or skillet over medium-high heat. Cook the beef patties for about 4-5 minutes on each side, or until they reach the desired doneness. In the last minute of cooking, place a slice of Monterey Jack cheese on top of each patty to melt.

Assemble the Burger

    Build the Burger

    Toast the brioche bun lightly. Spread a generous amount of chimichurri butter on the bottom bun. Place the cooked beef patty with melted cheese on top, followed by a leaf of lettuce and sliced tomato. Drizzle with additional roja chimichurri sauce before placing the top bun.
