Preparation

    Prepare the Bearnaise Sauce

    In a saucepan, combine white wine vinegar, shallots, and tarragon. Simmer until reduced by half. Let cool slightly. Whisk in egg yolks and place over low heat, whisking continuously. Gradually add melted butter until the sauce thickens. Season with salt and black pepper.

    Cook the Bacon

    In a skillet, cook the house-cured bacon over medium heat until crispy. Set aside on paper towels to drain.

    Prepare the Lobster

    In the same skillet, melt the butter. Add the lobster claws and knuckle meat, and sauté for 3-4 minutes until heated through. Set aside.

    Cook the Wagyu Patty

    Season the wagyu patty with salt and pepper. In the same skillet, cook the patty for about 3-4 minutes on each side for medium-rare, or until desired doneness is achieved.

Assembly

    Assemble the Burger

    On the bottom half of the brioche bun, layer the lettuce leaves. Place the cooked wagyu patty on top, followed by the crispy bacon, sautéed lobster meat, and claws. Generously drizzle the bearnaise sauce over the top before placing the top half of the brioche bun.
