Dumpling Preparation

Make the Dough
In a mixing bowl, combine the all-purpose flour, boiled potatoes, shredded cheddar cheese, chopped scallions, egg, salt, and black pepper. Mix well until a dough forms.

Shape the Dumplings
Take a small portion of the dough and shape it into a ball about the size of a golf ball. Flatten slightly and repeat until all the dough is used.

Heat the Oil
In a deep frying pan, heat the oil over medium heat. Ensure the oil is hot enough for frying by testing with a small piece of dough.

Fry the Dumplings
Carefully add the dumplings to the hot oil, a few at a time. Fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
Guinness Cheese Sauce Preparation

Add Milk and Guinness
Gradually whisk in the milk and Guinness beer, stirring constantly to avoid lumps. Continue to cook until the mixture thickens, about 3-5 minutes.

Add Cheese and Seasoning
Remove from heat and stir in the shredded cheddar cheese until melted and smooth. Season with salt and black pepper to taste.
