Preparing the Chicken

    Season the Chicken

    Pat the chicken breasts dry with paper towels. Rub the blackening spice blend all over the chicken breasts, ensuring they are well-coated. Sprinkle salt and black pepper on both sides.

    Cook the Chicken

    Heat olive oil in a skillet over medium-high heat. Once hot, add the seasoned chicken breasts. Cook for about 5-7 minutes on each side, or until the chicken is cooked through and has a nice charred crust. The internal temperature should reach 165°F (75°C).

    Rest the Chicken

    Remove the chicken from the skillet and let it rest for 5 minutes before slicing.

Assembling the Sandwich

    Prepare the Rolls

    While the chicken is resting, slice the ciabatta rolls in half and lightly toast them if desired.

    Spread 2 tablespoons of mayonnaise on the bottom half of each ciabatta roll.
