Patty Preparation

Prepare the Seafood
In a food processor, add the scallops and shrimp. Pulse until finely chopped but not pureed.

Combine Ingredients
In a mixing bowl, combine the chopped seafood with breadcrumbs, egg, minced garlic, salt, black pepper, and lemon juice. Mix until well combined.

Form Patties
Divide the mixture into 4 equal portions and shape them into patties. Place on a plate and refrigerate for 30 minutes to firm up.
Mango Slaw Preparation

Mix the Slaw Ingredients
In a large bowl, combine diced mango, shredded red cabbage, grated carrot, chopped cilantro, lime juice, and salt. Toss well to combine.

Chill the Slaw
Cover the bowl and refrigerate the slaw for at least 20 minutes to allow the flavors to meld.
Lemon-Garlic Aioli Preparation

Prepare the Aioli
In a small bowl, whisk together mayonnaise, minced garlic, lemon juice, and salt until smooth and well combined.

Chill the Aioli
Cover and refrigerate the aioli until ready to use.
Cooking the Patties

Cook the Patties
Heat a skillet over medium heat and add a bit of oil. Cook the patties for about 3-4 minutes on each side, or until golden brown and cooked through.
Assembly of the Burger

Add the Lettuce and Tomato
Layer with lettuce, a cooked patty, sliced tomato, and a scoop of mango slaw. Top with onion rings.

Finish the Burger
Place the top half of the bun over the stacked ingredients. Repeat for remaining patties.
