In a large bowl, combine the pork shoulder, orange juice, lime juice, minced garlic, cumin, chili powder, oregano, salt, black pepper, and bay leaves. Mix well to ensure the pork is fully coated in the marinade. Cover and refrigerate for at least 4 hours, preferably overnight for best flavor.

After marinating, preheat your oven to 300°F (150°C). Place the marinated pork in a roasting pan and cover with aluminum foil. Cook for about 4 hours, or until the pork is tender and easily shreds with a fork. Alternatively, you can use a slow cooker on low for 8 hours.

Once cooked, remove the pork from the oven or slow cooker and let it rest for 15 minutes. Then, using two forks, shred the pork into bite-sized pieces.
