Method

Preparing the Corned Beef

  1. 1

    Brining the Corned Beef

In a large pot, add the corned beef brisket, water, and pickling spice. Make sure the brisket is fully submerged.

  2. 2

    Simmering the Brisket

Bring the pot to a boil over high heat, then reduce to low heat and simmer for about 3 hours, or until the meat is tender.

Cooking the Vegetables

  1. 3

    Preparing the Vegetables

While the beef is simmering, prepare the vegetables. Chop the cabbage, peel and slice the carrots, and quarter the potatoes.

  2. 4

    Cooking with the Corned Beef

Once the brisket has cooked for about 3 hours, add the potatoes and carrots to the pot. Allow them to cook for about 20 minutes.

  3. 5

    Adding the Cabbage

Finally, add the chopped cabbage to the pot and cook for an additional 10-15 minutes until all vegetables are tender.

Finishing Touches

  1. 6

    Seasoning

Remove the brisket and vegetables from the pot. Season with salt and pepper to taste, and add butter to the vegetables while they are still warm.

  2. 7

    Slicing the Brisket

Let the corned beef rest for a few minutes before slicing against the grain into thin slices.

  3. 8

    Serving

Serve the sliced corned beef with vegetables on the side, and enjoy your St. Patrick's Day feast!
