Preparing the Steak

    Season the Ribeye

    Remove the ribeye steak from the refrigerator and let it sit at room temperature for about 30 minutes. This helps it cook more evenly. Pat the steak dry with paper towels. Season both sides generously with salt and black pepper.

    Preheat the Grill

    Preheat your grill to high heat (around 450°F to 500°F). If using a charcoal grill, make sure the coals are glowing red and covered with ash.

    Oil the Steak

    Drizzle olive oil over the steak and rub it evenly on both sides. This helps prevent sticking and adds flavor.

Grilling the Steak

    Grill the Ribeye

    Place the ribeye steak on the grill. For a medium-rare steak, grill for about 4-5 minutes on the first side without moving it. Flip the steak and cook for another 4-5 minutes on the other side. Use a meat thermometer to check for doneness: 130°F for medium-rare.

    Add Garlic and Rosemary (optional)

    If using garlic and rosemary, place the whole garlic cloves and the sprig of rosemary on the grill alongside the steak during the last few minutes of cooking. This will infuse additional flavor into the meat.

    Rest the Steak

    Once the steak is cooked to your liking, remove it from the grill and let it rest on a cutting board for about 5-10 minutes. This allows the juices to redistribute within the meat.
