In a medium mixing bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, and a pinch of salt until well combined and slightly frothy.

Heat a non-stick skillet or griddle over medium heat and add 1 tablespoon of butter, allowing it to melt and coat the surface.

Dip the Bread
Take each slice of brioche bread and dip it into the egg custard mixture, ensuring both sides are coated but not overly soaked.

Grill the Bread
Place the dipped bread slices onto the skillet. Cook for about 2-3 minutes on each side or until golden brown and slightly crispy.

Add More Butter
If necessary, add an additional tablespoon of butter to the skillet for the second batch of toast.
