    Prepare the Steaks

    Take the filet mignon steaks out of the refrigerator and allow them to come to room temperature for about 30 minutes before cooking. This ensures even cooking.

    Season the Steaks

    Pat the steaks dry with paper towels. Season both sides generously with salt and black pepper.

    Sear the Steaks

    Heat olive oil in a skillet over medium-high heat. Once the oil is hot, add the steaks to the skillet. Sear for about 4-5 minutes on one side without moving them.

    Flip and Add Butter

    Flip the steaks and add butter and optional herbs to the skillet. Cook for another 4-5 minutes for medium-rare, basting the steaks with the melted butter.

    Rest the Steaks

    Remove the steaks from the skillet and let them rest on a plate for about 5 minutes before serving.

Mashed Potatoes

    Prepare the Potatoes

    Peel and chop the potatoes into evenly sized pieces. This will ensure they cook evenly.

    Boil the Potatoes

    Place the chopped potatoes in a large pot and cover with cold water. Add a generous pinch of salt. Bring to a boil over high heat and cook until tender, about 15-20 minutes.

    Drain and Mash

    Once the potatoes are fork-tender, drain them in a colander. Return them to the pot and mash with a potato masher until smooth.

    Add Butter and Cream

    Add the butter and heavy cream to the mashed potatoes. Stir until completely combined. Season with additional salt and black pepper to taste.

    Spoon the creamy mashed potatoes onto plates and serve alongside the filet mignon.
