2. Sauté the Aromatics
In a large pot, heat the oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic, grated ginger, and slit green chilies, and cook for an additional 2 minutes until fragrant.

Add the chopped Roma tomatoes to the pot and stir well. Cook for about 7-10 minutes until the tomatoes soften and release their juices. Stir in the turmeric powder, red chili powder, salt, and black pepper, mixing well.
4. Incorporate the Crab and Tamarind
Add the cleaned crab pieces to the pot. Pour in the tamarind paste and mix everything together. Ensure the crab is well coated with the tomato and spice mixture.
5. Simmer
Cover the pot and let the mixture simmer on low heat for about 20-25 minutes, stirring occasionally until the crab is fully cooked and tender. Adjust seasoning with salt and pepper as needed.
6. Garnish and Serve
Once cooked, remove from heat and garnish with chopped cilantro. Serve hot with rice or bread.
