Spring Roll Filling Preparation

Prepare the Vegetables
In a large mixing bowl, combine shredded carrots, chopped cabbage, sliced bell pepper, and chopped green onions.

Add Flavorings
Add minced garlic, minced ginger, soy sauce, sesame oil, salt, and black pepper to the vegetables. Mix well to combine.

Set Aside
Let the filling mixture sit for about 10 minutes to allow the flavors to meld.
Rolling the Spring Rolls

Prepare the Wrappers
Lay a spring roll wrapper on a clean surface with one corner pointing towards you.

Fill the Wrapper
Place about 2 tablespoons of the vegetable filling near the corner closest to you.

Roll and Seal
Fold the corner over the filling, tuck it in, then fold the sides in, and roll tightly away from you. Seal the edge with a little water.

Repeat
Repeat the process with the remaining wrappers and filling.
Frying the Spring Rolls

Heat the Oil
In a deep frying pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Spring Rolls
Carefully add the spring rolls to the hot oil, a few at a time. Fry until golden brown and crispy, about 4-5 minutes.

Drain Excess Oil
Remove the spring rolls and drain on paper towels.
Sweet and Sour Sauce Preparation

Combine Ingredients
In a saucepan, mix together sugar, vinegar, ketchup, soy sauce, cornstarch, and water.

Cook Sauce
Bring the mixture to a boil over medium heat, stirring constantly until the sauce thickens, about 3-5 minutes.

Remove from heat and let cool slightly before serving with the spring rolls.
