Coconut Sauce

Method

Preparing the Sticky Rice

1

Soak the Rice

Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or overnight for best results.

2

Steam the Rice

Drain the soaked rice and place it in a steamer lined with cheesecloth. Steam the rice over boiling water for about 25-30 minutes until tender and sticky.

Making the Coconut Sauce

3

Combine Ingredients

In a saucepan, combine the coconut milk, sugar, and salt. Heat over medium heat, stirring until the sugar dissolves. Do not let it boil.

4

Reserve Sauce

Once the sugar is dissolved, remove from heat and reserve about 1/4 cup of the coconut sauce for drizzling later.

5

Mix Sauce with Rice

Pour the remaining coconut sauce over the steamed sticky rice. Stir gently to combine and let it sit for about 15 minutes to absorb the flavors.

Preparing the Toppings

6

Slice the Mango

Peel the ripe mangoes and slice them into thin wedges.

7

Toast the Seeds or Beans

In a small pan, lightly toast the sesame seeds or mung beans over low heat until golden brown.

Serving the Dish

8

Assemble the Dish

On a serving plate, place a portion of the sticky rice. Arrange the sliced mango on top or beside the rice.

9

Drizzle with Coconut Sauce

Drizzle the reserved coconut sauce over the sticky rice and mango. Sprinkle with toasted sesame seeds or mung beans.

10

Serve and Enjoy

Serve warm or at room temperature and enjoy your delicious mango sticky rice!
