Soak the Rice Noodles
In a large bowl, soak the rice noodles in warm water for about 30 minutes or until softened. Drain and set aside.

Prepare the Sauce
In a small bowl, mix together the fish sauce, soy sauce, brown sugar, tamarind paste, and a dash of Sriracha sauce. Set aside.

Cook the Protein
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. If using, add the sliced chicken and cook until browned and cooked through, about 5-7 minutes. If using shrimp, add them and cook until they turn pink, about 3-4 minutes. If using tofu, cook until golden brown, about 5-7 minutes. Remove protein from skillet and set aside.

Add Noodles and Sauce
Add the drained rice noodles to the skillet along with the sauce mixture. Toss to coat the noodles evenly and cook for about 2-3 minutes.

Incorporate Eggs and Vegetables
Push the noodles to one side of the skillet. Pour the beaten eggs into the other side and scramble them until fully cooked. Add the cooked protein back into the skillet along with the bean sprouts and green onions. Toss everything together and cook for another 2 minutes.

Serve
Remove from heat and serve hot. Garnish with crushed peanuts and lime wedges on the side.
