Prepare the Ingredients

Cut the Protein

Slice the chicken breast into bite-sized pieces. If using tofu, cut it into cubes.

Chop the Vegetables

Slice the red bell pepper and zucchini into thin strips. Drain the bamboo shoots.

Cook the Curry

Heat the Oil

In a large pan or wok, heat the vegetable oil over medium heat.

Add Curry Paste

Once the oil is hot, add the green curry paste. Stir and cook for about 1-2 minutes until fragrant.

Add Protein

Add the sliced chicken (or tofu) to the pan and cook for 5-7 minutes until browned and cooked through.

Add Coconut Milk

Pour in the coconut milk and stir to combine with the curry paste and protein.

Add Vegetables

Add the sliced red bell pepper, zucchini, and bamboo shoots to the pan. Stir well.

Season the Curry

Add the fish sauce (or soy sauce) and sugar. Stir to combine and let it simmer for 10 minutes until the vegetables are tender.

Add Basil

Just before serving, stir in the fresh basil leaves.

Serve the green curry hot over steamed rice or noodles, garnishing with additional basil if desired.
