    Prepare the Prawns

    Clean and devein the large prawns, ensuring to remove any shells and tails. Pat them dry with a paper towel.

    Make the Batter

    In a mixing bowl, combine all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add ice water to the dry ingredients, whisking until you achieve a smooth batter. The batter should be thick enough to coat the prawns.

    Heat the Oil

    In a deep frying pan or wok, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F). You can test if the oil is ready by dropping a small amount of batter into it; it should sizzle and rise to the surface.

    Fry the Prawns

    Dip each prawn into the batter, ensuring it is completely coated. Carefully place the battered prawns into the hot oil, frying them in batches to avoid overcrowding. Fry for about 3-4 minutes or until they are golden brown and crispy.

    Prepare the Sweet & Sour Sauce

    In a small bowl, whisk together sugar, vinegar, ketchup, soy sauce, and chili sauce until well combined. Adjust the ingredients according to your taste, adding more sugar for sweetness or more vinegar for acidity.

    Once the prawns are cooked, remove them from the oil and drain on paper towels. Serve hot with the sweet & sour sauce on the side for dipping.
