Preparation
Cook the Noodles
Bring a large pot of water to a boil. Add the wide rice noodles and cook according to the package instructions until al dente, usually about 6-8 minutes. Drain the noodles and set aside.
Prepare the Sauce
In a small bowl, mix together the soy sauce, oyster sauce, and sugar. Set aside.
Cook the Chicken (or Protein of Choice)
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the chicken (or your chosen protein) and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
Stir-fry Broccoli and Garlic
In the same skillet, add another tablespoon of vegetable oil. Add minced garlic and broccoli florets. Stir-fry for 2-3 minutes until the broccoli is tender but still crisp.
Add Noodles and Sauce
Add the cooked noodles and the sauce mixture to the skillet with broccoli. Toss everything together to ensure the noodles are well-coated with the sauce.
Scramble the Eggs
Push the noodle mixture to one side of the skillet. In the empty space, add the remaining tablespoon of vegetable oil and crack the eggs. Scramble them until fully cooked, then mix into the noodles.
Combine and Season
Return the cooked chicken (or protein) to the skillet. Add white pepper to taste and stir everything together until well combined and heated through.
Serve
Remove from heat and serve hot, garnished with additional white pepper if desired.
