Soak the Noodles

Soak the wide rice noodles in hot water for about 20 minutes or until they become soft. Drain and set aside.

Prepare the Vegetables

While the noodles are soaking, slice the red bell pepper, julienne the carrot, and cut the broccoli into florets.

Cooking

Stir-Fry the Vegetables

In a large pan or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the minced garlic and stir-fry for about 30 seconds until fragrant.

Add Vegetables

Add the sliced red bell pepper, julienned carrot, and broccoli florets to the pan. Stir-fry for about 3-4 minutes until they start to soften.

Add Noodles and Sauce

Add the soaked noodles to the pan along with the soy sauce, oyster sauce, chili sauce, sugar, salt, and black pepper. Toss everything together and stir-fry for another 3-4 minutes until well combined.

Scramble the Eggs

Push the noodle mixture to one side of the pan, crack the eggs into the empty side, and scramble them gently. Once cooked, mix the scrambled eggs into the noodle mixture.

Add Thai Basil

Remove the pan from heat and stir in the Thai basil leaves. Toss until the basil is wilted and evenly distributed.
