Prepare the Rice Noodles
Soak the rice noodles in warm water for about 30 minutes, or until they are pliable. Drain and set aside.

Cook the Tofu
Cut the firm tofu into small cubes. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat. Add the tofu cubes and cook until golden brown on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.

Combine Ingredients
Add the soaked rice noodles to the skillet with the scrambled eggs. Incorporate the tofu, dry shrimp powder, and bean sprouts. Stir-fry for another 3-5 minutes, ensuring the noodles are well mixed and heated through.

Garnish and Serve
Remove the skillet from heat. Finely chop the scallions and sprinkle them on top along with the ground peanuts. Serve hot.
