    Prepare the Ingredients

    Start by gathering all the necessary ingredients. Wash the vegetables thoroughly. Slice the cucumber and carrot into thin strips.

    Cook the Rice Noodles

    Boil water in a pot and add the rice noodles. Cook according to package instructions, usually for about 3-5 minutes until tender. Drain and set aside.

    Prepare the Ground Pork

    In a pan, heat 1 tablespoon of vegetable oil over medium heat. Add the ground pork, season with salt and pepper to taste, and cook until browned and fully cooked, about 5-7 minutes. Remove from heat.

    Make Fried Eggs

    In a bowl, beat the two eggs. In the same pan, add a little more oil if necessary and pour in the beaten eggs. Cook until set, then flip to cook the other side. Once cooked, remove from the pan and slice into strips.

    Prepare the Rice Paper Wrappers

    Fill a shallow dish with warm water. Dip each rice paper wrapper in the water for about 10-15 seconds until soft, then lay it flat on a clean surface.

    Assemble the Fresh Rolls

    On the softened rice paper, place a lettuce leaf, a small amount of rice noodles, cooked ground pork, a few strips of fried egg, cucumber, carrot, mint, and cilantro. Fold the sides of the rice paper over the filling and roll tightly from the bottom up.

    Serve

    Place the fresh rolls on a serving platter. Crush the peanuts and sprinkle them on top. Serve with sweet and sour sauce on the side for dipping.
