Prepare the Chicken
Cut the chicken thighs into bite-sized pieces and place them in a large bowl.

Mix Marinade
In a separate bowl, combine garlic, fish sauce, soy sauce, sugar, black pepper, and lime juice.

Marinate Chicken
Pour the marinade over the chicken pieces, mix well, and let it marinate for at least 30 minutes (or up to 2 hours) in the refrigerator.

Prepare the Batter
In a mixing bowl, whisk together all-purpose flour, cornstarch, baking powder, and salt.

Add Water
Gradually add cold water to the dry ingredients and mix until a smooth batter forms. Set aside.
Sweet & Sour Sauce

Make the Sauce
In a saucepan, combine ketchup, vinegar, brown sugar, soy sauce, and pineapple juice. Stir well.

Thicken the Sauce
In a small bowl, mix cornstarch and water to form a slurry. Add this to the saucepan and cook over medium heat, stirring, until the sauce thickens. Remove from heat and set aside.

Heat the Oil
In a deep pot, heat vegetable oil over medium-high heat until it reaches 180°C (350°F).

Coat the Chicken
Remove the marinated chicken from the refrigerator, dip each piece into the batter, ensuring it's fully coated.

Fry the Chicken
Carefully place the battered chicken pieces into the hot oil in batches. Fry until golden brown and crispy, about 5-7 minutes. Use a slotted spoon to remove them and drain on paper towels.

Serve the crispy chicken hot with the sweet & sour sauce on the side.
