    Roast the Peppers

    Preheat the oven to 400°F (200°C). Place the poblano peppers on a baking sheet and roast in the oven for about 20 minutes, turning occasionally, until the skins are blistered and charred. Remove from the oven and let cool.

    Prepare the Filling

    Once the peppers are cool, peel off the charred skin, remove the seeds, and chop them into small pieces. In a skillet, heat the vegetable oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute.

    Mix the Filling

    In a bowl, combine the chopped poblano peppers, sautéed onions and garlic, cream cheese, sour cream, shredded cheese, chopped cilantro, salt, and black pepper. Mix until well combined.

    Assemble the Burritos

    Lay a flour tortilla flat on a clean surface. Spoon a generous amount of the filling onto the center of the tortilla. Fold in the sides and roll up tightly to form a burrito. Repeat with the remaining tortillas and filling.

    Serve

    You can serve the burritos as-is or grill them on a skillet for 2-3 minutes on each side for a crispy texture. Cut in half and enjoy!
