    Prepare the Chiles

    Remove the stems and seeds from the guajillo and ancho chiles. In a skillet over medium heat, lightly toast the chiles for about 2-3 minutes until fragrant.

    Blend the Sauce

    In a blender, combine toasted chiles, garlic cloves, onion, cumin, oregano, and about 1 cup of beef broth. Blend until smooth.

    Cook the Beef

    In a large pot or slow cooker, add the chuck roast, the blended sauce, remaining beef broth, bay leaves, salt, and black pepper. Cook on low for 8 hours or until the beef is tender.

    Shred the Beef

    Once cooked, remove the beef from the pot and shred it using two forks. Return the shredded beef to the pot and mix it with the sauce.

    Prepare Tacos

    Warm the corn tortillas on a skillet. Place a generous amount of the birria filling in each tortilla and fold.

    Serve

    Serve the tacos with a side of consome (the broth) and garnish with chopped cilantro, lime wedges, and sliced radishes.
