    Roasting the Peppers

    Preheat the oven to 400°F (200°C). Place the poblano peppers on a baking sheet and roast in the oven for about 20 minutes, turning occasionally until the skin is blistered and charred. Remove from the oven and let them cool.

    Preparing the Filling

    Once the peppers are cool, peel off the charred skin, remove the seeds, and slice them into strips. In a pan, heat vegetable oil over medium heat. Add sliced onion and minced garlic, cooking until translucent. Add the roasted poblano strips and cook for another 5 minutes.

    Making the Cream Sauce

    In a bowl, mix sour cream, cream cheese, salt, and black pepper. Stir until smooth and combined. Pour the cream mixture into the pan with the poblano and onion mixture, stirring to combine well. Cook for 2-3 minutes until heated through.

    Assembling the Burritos

    Warm the tortillas in a separate pan or microwave. Spoon a generous amount of the poblano and cream mixture onto the center of each tortilla. Roll them up tightly to enclose the filling.

    Serve the burritos warm, garnished with fresh cilantro if desired.
