    Prepare the Pork

    In a large pot, heat olive oil over medium heat. Season the pork shoulder with salt and pepper, then sear it in the pot until browned on all sides.

    Create the Sauce

    Chop the red bell peppers, onion, and garlic. Once the pork is browned, remove it from the pot and set aside. In the same pot, add the chopped vegetables and sauté until softened.

    Combine and Simmer

    Add the cumin and chili powder to the vegetables, stirring for about 1 minute. Return the pork to the pot, add enough water to cover the pork, and bring to a simmer. Cover and cook on low heat for 2-3 hours until the pork is tender.

    Shred the Pork

    Once the pork is tender, remove it from the pot and shred it using two forks. Return the shredded pork to the pot and stir to combine with the sauce.

    Assemble the Burritos

    Warm the tortillas in a dry skillet. Fill each tortilla with the pork mixture, a dollop of sour cream, and sprinkle with chopped cilantro. Roll up the burritos tightly.
