    Prepare the Pork

    In a large pot, add the pork shoulder, season with salt, black pepper, cumin, and oregano. Pour in the chicken broth and bring to a boil. Reduce to a simmer and cover, cooking for about 1.5 to 2 hours until the pork is tender and easily shreds.

    Make the Red Pepper Sauce

    While the pork is cooking, roast the red bell peppers on a hot grill or under the broiler until charred. Place the peppers in a bowl, cover with plastic wrap, and let steam for 10 minutes. Peel the skins off, remove the seeds, and blend with garlic and onion until smooth.

    Combine and Simmer

    Once the pork is cooked, shred it and return it to the pot. Add the blended red pepper sauce and simmer for an additional 20 minutes to meld the flavors.

    Assemble the Burritos

    Warm the flour tortillas in a dry skillet. Spoon the pork mixture onto the tortillas, top with shredded cheese, and add a dollop of sour cream. Roll the tortillas tightly to form burritos.

    Garnish with fresh cilantro and serve hot with additional sour cream on the side.
