Preparation Steps

    Prepare the Peppers

    Preheat your oven to 400°F (200°C). Cut a slit down one side of each poblano pepper and carefully remove the seeds.

    Sauté the Filling

    In a skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent. Stir in the chopped cilantro, salt, and black pepper. Remove from heat.

    Stuff the Peppers

    In a bowl, mix the sautéed onion and garlic with the Oaxaca cheese and queso fresco. Stuff each poblano pepper with the cheese mixture.

    Bake the Peppers

    Place the stuffed poblano peppers on a baking sheet and bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the cheese is melted.

    Serve

    Remove from the oven and let cool slightly. Serve warm, garnished with additional cilantro if desired.
