Marinating the Pork

    Prepare the Marinade

    In a pot, bring water to a boil. Remove stems and seeds from guajillo and ancho chiles, then soak them in boiling water until soft, about 15 minutes. Blend soaked chiles, garlic, cumin, oregano, vinegar, salt, and pepper until smooth.

    Marinate the Pork

    Cut the pork shoulder into large chunks and place it in a bowl. Pour the marinade over the pork, ensuring all pieces are well coated. Cover and refrigerate for at least 4 hours, preferably overnight.

Cooking the Pork

    Cook the Pork

    Preheat a grill or skillet over medium-high heat. Remove the pork from the marinade and grill or pan-sear until cooked through and slightly charred, about 15-20 minutes, turning occasionally. Let it rest for 5 minutes before slicing.

Assembling the Tacos

    Assemble the Tacos

    Warm the corn tortillas on a grill or skillet. Fill each tortilla with sliced pork, diced onion, and fresh cilantro. Serve with lime wedges on the side.
