    Prepare the Marinade

    Remove the stems and seeds from the guajillo and ancho chiles. In a saucepan, boil the chiles in water for about 10 minutes until soft. Drain and add to a blender with garlic, cumin, oregano, apple cider vinegar, salt, and black pepper. Blend until smooth.

    Marinate the Pork

    Cut the pork shoulder into chunks and place it in a large bowl. Pour the marinade over the pork, ensuring it is well coated. Cover and refrigerate for at least 4 hours, preferably overnight.

    Cook the Pork

    Preheat your grill or skillet over medium-high heat. Remove the pork from the marinade and cook for about 6-8 minutes per side or until the internal temperature reaches 145°F (63°C).

    Serve

    Let the pork rest for a few minutes before slicing. Serve with diced onions, chopped cilantro, and guacamole on the side.
