Prepare the Shrimp
In a bowl, combine the raw shrimp and lime juice. Ensure the shrimp is fully submerged in the juice. Cover and refrigerate for about 30 minutes or until the shrimp turns pink and opaque.

Mix the Vegetables
While the shrimp is marinating, prepare the vegetables. In a large mixing bowl, combine the pico de gallo, diced carrots, diced tomatoes, and diced tomatillos.

Once the shrimp is ready, drain excess lime juice and add the shrimp to the vegetable mixture. Gently toss to combine.

Season the ceviche with salt and black pepper to taste. Mix well.
