Filling Preparation

    Cook the Chorizo

    In a skillet over medium heat, cook the chorizo until browned and fully cooked. Remove excess fat if necessary.

    Prepare Potatoes

    Peel and dice the potatoes. Boil them in salted water until fork-tender, then drain.

    Mix Filling

    In the same skillet, sauté diced onion and minced garlic until translucent. Add the cooked chorizo and potatoes, mix well. Stir in Oaxaca cheese until melted and combined. Set the filling aside to cool.

Dough Preparation

    Make the Dough

    In a large bowl, mix flour and salt. Cut in butter until the mixture resembles coarse crumbs. Beat the egg and water together, then mix into the flour until a dough forms. Chill for 30 minutes.

Assembling Empanadas

    Roll Out Dough

    On a floured surface, roll out the dough to about 1/8 inch thick. Cut into circles about 4 inches in diameter.

    Fill and Seal

    Place a spoonful of the filling in the center of each circle. Fold over and seal the edges with a fork or by crimping.

    Heat Oil

    In a deep pot, heat vegetable oil to 350°F (175°C).

    Fry Empanadas

    Fry the empanadas in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.

Prepare Sauces

    Chipotle Aioli

    Blend mayonnaise and chipotle peppers until smooth.

    Avocado Dipping Sauce

    Mash the avocado and mix with lime juice until creamy.
