Prepare the Pork
In a large pot, combine the pork shoulder, orange juice, lime juice, garlic, cumin, oregano, salt, and black pepper. Add enough water to cover the pork.

Cook the Pork
Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for about 2 hours or until the pork is tender and easily shredded.

Make Serrano Salsa
Roast the serrano peppers and tomatillos until charred. Blend them with garlic and salt until smooth.

Assemble the Tacos
Once the pork is cooked, shred it using two forks. Warm the corn tortillas on a skillet. Place shredded pork on the tortillas, top with pickled onions and fresh cilantro. Serve with serrano salsa on the side.
