Cooking Instructions

  1. 1

    Prepare the Pork

In a large pot, combine the pork shoulder, orange juice, lime juice, garlic, cumin, oregano, salt, and black pepper. Add enough water to cover the pork.

  2. 2

    Cook the Pork

Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for about 2 hours or until the pork is tender and easily shredded.

  3. 3

    Prepare Pickled Onions

While the pork is cooking, slice the red onion thinly. In a bowl, mix white vinegar, sugar, and salt until dissolved. Add the onions, cover, and let them pickle for at least 30 minutes.

  4. 4

    Make Serrano Salsa

Roast the serrano peppers and tomatillos until charred. Blend them with garlic and salt until smooth.

  5. 5

    Assemble the Tacos

Once the pork is cooked, shred it using two forks. Warm the corn tortillas on a skillet. Place shredded pork on the tortillas, top with pickled onions and fresh cilantro. Serve with serrano salsa on the side.
