1. Prepare the Rub

In a small bowl, mix the red chili powder, garlic powder, onion powder, cumin, salt, and black pepper. Rub this mixture all over the ribeye steak and let it sit for at least 30 minutes.

2. Make Chimichurri Sauce

In a food processor, combine the parsley, oregano, garlic cloves, red wine vinegar, and olive oil. Blend until smooth. Season with salt and pepper to taste.

3. Cook the Steak

Preheat a grill or skillet over high heat. Cook the ribeye steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest for 5 minutes.

4. Sauté Vegetables

In a skillet, heat a bit of olive oil over medium heat. Add sliced bell peppers, onions, and mushrooms, sautéing until soft and caramelized. Add minced garlic in the last minute of cooking.

5. Prepare Mashed Potatoes

Boil the potatoes until fork-tender, then drain and mash them with butter, milk, and Oaxaca cheese until creamy. Season with salt to taste.

6. Serve

Slice the rested steak and serve it with the chimichurri sauce drizzled over. Plate with the sautéed vegetables and a generous serving of garlic Oaxaca cheese mashed potatoes.
