Prepare the Jalapenos
Preheat your oven to 375°F (190°C). Slice the jalapeno peppers in half lengthwise and remove the seeds and membranes carefully.

Stuff with Cheese
Cut the Oaxaca cheese into small pieces and stuff each jalapeno half with the cheese, pressing it in well.

Make the Batter
In a bowl, whisk together the all-purpose flour, baking powder, salt, and black pepper. Slowly add the beer, mixing until smooth.

Dip and Fry
Dip each stuffed jalapeno into the batter, ensuring it is fully coated. Heat oil in a deep pan over medium heat and fry the jalapenos until golden brown, about 3-4 minutes. Remove and drain on paper towels.

Prepare Chipotle Aioli
In a small bowl, blend together the mayonnaise, chipotle peppers (chopped), and lime juice until smooth. Adjust seasoning to taste.

Serve the stuffed jalapenos hot with the chipotle aioli on the side for dipping.
