Make the Filling
In a large mixing bowl, blend the cream cheese until smooth. Gradually add the sweetened condensed milk and mix until well combined. Add the fresh lime juice, lime zest, and eggs. Mix until the filling is smooth and creamy.

Bake the Pie
Pour the filling into the cooled graham cracker crust. Bake in the preheated oven for 15-20 minutes, or until the filling is set but slightly jiggly in the center. Remove from the oven and allow to cool to room temperature before refrigerating for at least 2 hours.

Prepare the Strawberry Syrup
In a saucepan over medium heat, combine fresh strawberries, water, and remaining 1/4 cup of sugar. Bring to a boil, then reduce heat and simmer until strawberries are soft and syrupy, about 10-15 minutes. Mix cornstarch with a little water to create a slurry, then add to the saucepan to thicken. Stir continuously until thickened, then remove from heat and let cool.

Once the pie is chilled, slice and serve with the strawberry syrup drizzled on top.
