Prepare the Batter
In a large bowl, combine the New Mexico red chili flour, cornstarch, salt, and black pepper. Mix well until fully combined.

Heat the Oil
In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Calamari
Dredge the calamari rings in the chili flour mixture, ensuring they are evenly coated.

Fry the Calamari
Once the oil is hot, carefully add the coated calamari in batches, frying for about 2-3 minutes or until golden brown and crispy.

Drain and Serve
Remove the fried calamari from the oil and drain on paper towels. Serve hot with chipotle aioli and baja sauce on the side.
