Preparation and Cooking
1. Marinate the Chicken
Cut the chicken thighs into bite-sized pieces and combine them in a bowl with soy sauce, sake, mirin, garlic, ginger, and black pepper. Mix well to coat the chicken and let marinate for at least 30 minutes, preferably 1 hour.
2. Prepare for Frying
In a large bowl, add potato starch. Remove marinated chicken from the marinade and coat each piece evenly in the potato starch, shaking off any excess.
3. Fry the Chicken
Heat oil in a deep frying pan or pot to 170°C (340°F). Fry the chicken in batches, being careful not to overcrowd the pan, for about 5-6 minutes or until golden brown and cooked through. Use a slotted spoon to remove the chicken and place on paper towels to drain excess oil.
4. Serve
Serve hot with lemon wedges and a side of dipping sauce if desired.
