Preparation
- 1
Prepare the Cauliflower
Remove the leaves from the cauliflower and cut it into bite-sized florets. Rinse the florets under cold water and pat dry with a paper towel.
- 2
Prepare the Asparagus
Trim the woody ends of the asparagus by bending each stalk until it naturally snaps. Rinse under cold water and pat dry.
- 3
Preheat the Oven
Preheat your oven to 425°F (220°C) for roasting the asparagus.
- 4
Roast the Asparagus
In a mixing bowl, toss the asparagus with 1 tablespoon of olive oil, salt, and black pepper. Spread the asparagus on a baking sheet in a single layer. Roast in the preheated oven for about 12-15 minutes or until tender and slightly crispy.
- 5
Sauté the Cauliflower
In a large skillet, heat the remaining 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the cauliflower florets and season with salt and black pepper. Sauté for about 8-10 minutes, stirring occasionally, until the cauliflower is golden brown and tender.
- 6
Finish the Dish
Once the cauliflower is cooked, remove it from heat and drizzle with lemon juice. Toss to combine. Serve the sautéed cauliflower alongside the roasted asparagus.
