Preparation of Onion Rings

    Prepare the Onions

    Peel the large onions and slice them into 1/4 inch thick rings. Carefully separate the rings and set them aside.

    Make the Batter

    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Mix well. Gradually add the cold sparkling water to the dry ingredients, whisking until the batter is smooth and slightly thick.

    Heat the Oil

    In a deep frying pan or a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the heat by dropping a small amount of batter into the oil; it should sizzle immediately.

    Coat the Onion Rings

    Dip each onion ring into the batter, ensuring it is fully coated. Allow any excess batter to drip off before frying.

    Fry the Onion Rings

    Carefully place the battered onion rings into the hot oil in batches, making sure not to overcrowd the pan. Fry them for about 4-5 minutes, or until they are golden brown and crispy.

    Drain and Serve

    Once fried, remove the onion rings from the oil and place them on a plate lined with paper towels to drain excess oil. Serve hot with horseradish sauce on the side.
