    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, minced garlic, and bell pepper. Sauté for about 5 minutes, or until the vegetables are softened.

    Brown the Bison

    Add the ground bison to the pot. Cook, breaking it up with a spoon, until browned and cooked through, about 7-10 minutes.

    Add Spices

    Stir in the chili powder, cumin, paprika, salt, and black pepper. Cook for an additional 2 minutes to allow the spices to bloom.

    Combine Remaining Ingredients

    Add the canned diced tomatoes (with their juice), kidney beans, black beans, beef broth, and jalapeño (if using) to the pot. Stir well to combine.

    Simmer the Chili

    Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for at least 30 minutes, stirring occasionally. For deeper flavor, simmer for up to 1 hour.

    Taste and adjust seasoning if necessary. Serve hot in bowls or cups, garnished with your choice of toppings like cheese, sour cream, or fresh herbs.
